First trader announced for Bustler Derby as Derby-founded That Kick returns home

Bustler has announced the first confirmed trader for its new St James Yard destination in Derby, with Derby-founded Pan-Asian concept That Kick set to join the line-up ahead of the late spring launch.

Founded by Richard Ashleigh Stevenson and Fleuri Paramita Aprianti in 2023, That Kick began as a home business in Derby before growing into a fast-rising Midlands food brand with locations in Birmingham, Sheffield and Coventry.

The concept blends refined culinary technique with the vibrant energy of East and Southeast Asian street food, with dishes inspired by Indonesia, Malaysia, Japan, Vietnam, Thailand, China, Singapore, Korea and the Philippines.

Leading the kitchen is Derby-born chef Richard Stevenson, who brings more than 20 years of professional experience. His focus on precision cooking, wok technique and chef-led training shapes the brand’s disciplined execution and distinctive presentation.

Alongside him, Indonesian-born Fleuri Paramita Aprianti brings 18 years of experience in authentic Pan-Asian cuisine and restaurant development. With a background in food technology and business, and currently pursuing a PhD at Nottingham Trent University, she leads the flavour development behind the menu.

The pair previously traded with Bustler Nottingham, where they sold out and built a strong following, and say joining Bustler Derby feels like a natural next step.

Bustler’s new St James Yard development will feature around 20 shipping containers across two levels, bringing together kitchens, restaurants, bars, independent retail and service-led businesses alongside indoor and outdoor social spaces.

Bustler has also taken on a neighbouring building backing onto the site, which will be transformed into a dedicated taproom and private hire venue showcasing an independent brewery, craft drinks and wine-led experiences.

The wider development aims to create a modern independent high street in the city centre, combining food, drink, retail and creative businesses in one destination.

Applications to join the development have now closed following strong interest from independent brands across the UK. Further trader announcements will be made over the coming weeks ahead of the launch.

Bustler Derby will be launching later this year with further traders to be announced soon.

The development will transform an underused city centre site into a vibrant new destination, helping bring fresh energy to Derby’s city centre.
